Rotisserie Hamburgers to go

Chef Karsten shares an easy recipe on Rotisserie Style Hamburgers. He has yet again proven that anything can be made in the rotisserie. This method ensures each patty is incredibly juicy , offering a delightful twist on a beloved favorite.  After carefully putting this burgers together, he also shows us how to properly serve and hold them for your customers on the go.

Ingredients

Hamburgers:

  • Hamburgers (approximately 120g / 0.25 lbs each): 35 pcs
  • Bacon strips: 70 pcs
  • Brioche buns: 35 pcs
  • Eggs: 35 pcs
  • Aged cheese: 35 slices
  • Shredded cabbage: 200g (0.5 lbs)
  • Shredded carrots: 200g (0.5 lbs)

Burger Sauce:

  • Mayonnaise: 1 cup (250 ml)
  • Ketchup: ½ cup (125 ml)
  • Sriracha: 4 tbs (40 g)
  • Apple cider vinegar: 3 tbs (15 ml)
  • Mustard: ¼ cup (70 ml)

Instructions

1. Preparing the Rotisserie:

  • Set the Fri-Jado rotisserie to a temperature of 185°C (350°F) and let it preheat.

2. Preparing the Hamburgers:

  • Season the hamburgers with salt and pepper to taste.
  • Place the hamburgers in the insert baskets of the rotisserie.

3. Preparing the Bacon:

  • Form a ring with 2 slices of bacon and place it on top of the hamburgers in the insert baskets.

4. Cooking the Hamburgers and Bacon:

  • Grill the hamburgers and bacon together in the rotisserie for 16 minutes (this depends on the thickness of the burger).

5. Adding the Eggs:

  • After 16 minutes, crack the eggs and place them in the bacon rings on top of the hamburgers. The bacon ring will hold the yolk in place.
  • Grill the hamburgers with bacon and egg for another 4-6 minutes, or until the eggs are cooked.

6. Assembling the Hamburgers:

  • Remove the hamburgers from the oven and place a slice of aged cheese over them to allow it to melt.

7. Assembling the Hamburgers:

  • Add a bit of burger sauce to the bottom half of the bun.
  • Place the hamburger with melted cheese, bacon ring, and egg on the bun.
  • Then add the shredded cabbage and carrots. Cold ingredients should always be placed on top of the burger and not on the bottom.
  • Finish with another spoonful of burger sauce and place the top half of the bun over the vegetables.

8. Serving:

  • Place the hamburger in a burger wrapper. You can store it in an MCC Self-Service unit for up to 4 hours.
